Just for curiosity, do you remember if there is any particular Fantasy setting / world / saga / rules, where you can find the use of War Elephants? It happens that I have some of these beasts and I would like to use them for my Fantasy games. I am not tied to any particular setting, just looking for inspiration. Thank you in advance!

The Mumakil in Tolkien's works were elephants, not the mile high behemoths in the movies.

Hostile realms has a list with Elephants and Oliphants (as the souped up mega elephant) There is also a good section for troop building so, you could take a stock war elephant and build a custom force list around it which worked for you and was all your own.

Same goes for HOTT. The would be "Behemoths". And HOTT is currently free.

"Hyboria" … Not really; they are woolly mammoths….

Why have an elephant when you can have a woolly equivalent?

And if you don't like HOTT there is also Mighty armies. Plenty of ways to "roll your own" war beasties and not have them quite so generic as "Behemoth".
