…using historicals for the human kingdoms. What era or culture do you think would best represent Gondor?

I don't want them to look like the ones from the movies, mainly because I think that they're incorrect. I'm leaning towards 1st Crusade Normans. I know that Mithril minis based theirs off of Carolingians but I'm not sure if I like that or not.

I'm definitely using Gothic/German cavalry for Rohan and maybe some saxons for infantry.

Yeah, the title made me chuckle.

I can't help with what to use for Gondor, but I did use various historicals for my Haradrim in 15mm: link

1st Crusade Normans would work, especially if YOU think they would.

Normans is how I'm leanng, but Byzantines is also an interesting idea.

Later Byzantines for the Gondorian warriors, Normans for the Rohirrim.

I use Byzantines for Gondor. I like the fit. I use Franks, or Visigoth cavalry for Rohan, and Arthurian infantry for foot soldiers. I have also thought of using Carolignians for Rohan.

Khurasan's Belisarian Byzantines have been calling to me. I had thought of using Arthurians for Rohan, especially the new Splintered Light minis for that, but I also like Old Glory's Gothic/Lombards for the Rohirrim as well. Choices, choices.

You could use Carolingians if you want a slightly earlier Medieval look.

There's also Viking and Saxon Huscarls.
