I'm looking for any tips on constructing hedgehogs for a potential Normandy scenario in 6mm. Any easy ways to make all of those hedgehogs?

If hedgehogs are the welded steel girders that create a six-pointed tank obstacle, the easiest way in 6mm is to find a set or two of "jacks" in the dollar store.

Select the packages with the smallest jacks. Give the balls to your wife :) and then use nippers to cut the round end of each point of the ends and painted rusty.

Note, if you get the metal jacks (which are often the smallest), don't lose one in the carpet as they hurt like blazes to step on (see my earlier point about giving your balls to your wife).

I use Evergreen 1.6 mm (.60) angle strip styrene. Cut it into 3/8 pieces. Glue two of them into an X shape. Once they are dry, glue a third piece into the joint. I paint them charcoal gray and then highlight with rust.
