I love Spock, but as a central character from the beginning, I don't think he qualifies as "break out." To me, a "break out" character is one introduced as minor or even simply recurring, who then becomes significant in his or her own right. Thus, "Mork," who was intended as a one shot bit was so popular as to warrant his own show, is the very definition of a "break out" character, surprising everyone, including his creators. Spock, on the other hand, was intended to be a draw for viewers. He may have exceeded expectations in the long run (but so did the show as a whole), but that's not really "breaking out."

A breakout is a minor somebody whose part grows to become the centre or co-star of the show or who then goes off and gets their own show.

Respectfully disagree. Spock became a cultural icon. While he didn't get his own show, his character certainly help define the series. To some extent, his character transcends Star Trek.
