I don't know if it was listed in previous polls, but The Perfect Captain's "Ironbow" does a pretty good job of creating how I perceive the Crusades to have been fought. Its free online from their site: link |

Shattered Lances, and DBMM also does a good job for the period. The others seem to be more skirmish sets. |
