I go back and forth on this all the time. I tend to use 'A' for 15mm and 'B' for larger figures. Frankly I used 'C' for 30 years and was plenty happy with those figs too!
Technique A
A basic light flesh color, using inks or washes to fill in details.
Technique B
Paint a foundation (dark brown or flesh) plus white for eyes; followed by drybrushing in flesh; followed by a highlight color.
Technique C
A basic flesh color with no adornments.
