I believe the term is rooted in an episode of Happy Days, when The Fonz is out water skiing and there is this shark, and the crisis is avoided because he literally jumps over the shark.

I believe the term is now used to mean the moment when the writers have lost all creativity, and resort to the obvious (rather than the clever) to get out of trouble.

I have been pretty much a fan of nearly all of the Trek TV shows (enterprise was the weakest, just couldn'e get past the first couple of seasons). If there is a new Trek tv show, I have not seen it.

The original movies, and then TNG movies were fine (some better than others).

But when the newest kickstart to the movie franchise had a spoiled frat boy be Kirk, I was done. If that is what people mean when they refer to Abrams, then I totally agree. Just could not stand that portrayal of Kirk.
