So it looks like caffeine evolved independently at least 5 times, and that while the chemical in coffee beans and tea leaves is identical, it is synthesized through different pathways.

I suppose this is an example of chemical convergence. I was wondering how cacao or chocolate evolved caffeine also. Turns out a google search shows that cacao uses the same enzymatic pathways as tea. This would suggest that coffee and chocolate are not as closely related as I would have assumed. Chocolate is more closely related to tea.

Of course, the creationists are stating that this proves "intelligent design" is legit.
