"I have five vegan friends who close their eyes when they eat them and pretend they are potato chips," Farr says. "Bacon is the gateway meat."

Well Fritz someone was finally able to get a post in edgewise.

Interesting article, I sent a recipe for bacon to my sister-in-law a few weeks ago – my nieces and nephews are also bacoholics. Glad to see that the craze is for homemade bacon – my first thought was that there would higher demand leading to increased prices just as prices have started to go down.

I was also amused to see the rest of the article where they discussed using the whole animal. As my mother was raised on a farm, she told us all about 'everything but the squeal.' Her least favorite was lung. Apparently the more you chew it the more it fills your mouth.

Here in Poland you can several kinds of bacon – 'American' style [long, thin strips], home style [huge chunks with fatback streaks] and 'Gypsy' bacon [smoked in various spices] and several others. I love all varieties and use them for different things.

goragrad – We also use 'everything but the squeal' here as well – though I normally feed the lungs and other internal organs to the dogs in the 'smelly stuff' I cook for them [normally contains various animal parts + rice or some other grain and frozen veggies – basically whatever I have handy]. It smells to high heaven but is cheaper than dog food [in the long run], as prices for pig parts are cheaper than 1 can of dog food.

I like bacon well enough, but some people seem to have an unhealthy fascination with it. It's food. Good, yes, but just dead pig.

Everything in moderation.
