Michael is making fun of me because I bought a fairly pricey balsamic vinegar to drizzle over ice cream. (It's good on strawberries, too.) Surely I'm not the only one who does this?

And what else can I use it with? (Yes, I'm aware of the potential in salads and as part of marinade, although not this stuff for marinade.)

I've heard of this with strawberry vinaigrette on fruit, but not balsamic on ice cream. It could possibly be quite good, but I'd rather use syrups.

Caramelized onions and sauteed mushrooms. Preferably both, but the onions if you have to pick one of the two.

Then serve the above atop a (minimum) 12 oz Black Angus or Longhorn ribeye.

We appreciate good balsamico, and do like it on strawberries. Conceptually, ice cream is a possibility.

It's actually quite nice. And no, not on chocolate ice cream. A good vanilla, and not too much of the balsamico.

Gallowglass, I can use the cheaper stuff if I'm going to have other flavors like onions or fungi to mask the taste of the balsamic vinegar.

And no, Saginaw, I'm not gravid, thanks for asking.

Wyatt, this particular balsamico is reasonably viscous.

Great, more discord. Nancy's trying to share her recipes for syrups made with balsamico and orange juice, reduced, or balsamico and brown sugar, cooked down: both served over ice cream.

My Brother did something with balsamic vinegar, brandy and cherries and served on vanilla ice ream. It rocked.

Neo:

1) A cup of Balsamic vinegar (shouldn't be really great stuff) and the juice of six oranges. Reduce until a fairly thick syrup. This was originally a recipe for syrup for French Toast, actually. SWMBO says you can cheat by using OJ concentrate, which won't require as much reduction, but won't concenrtrate the balsamico as much, either.

2) From Gourmet magazine, probabaly in the '90s!: combine 4T balsamico and 4T packed brown sugar. Heat until sugar is dissolved and simmer for a minute. Toss warm sauce with quartered ripe strawberries and spoon, warm, over vanilla ice cream.

I'd be happy substituting a bolillo or telera roll if that's fresher locally.

That recipe is sort of a take on the classic appetizer of cubes of mortadella and parmigiano-reggiano, each topped with a drop of balsamico. Heck, any of those sandwich recipes would be yummy!

I see that it is covered, but I have used it drizzled over nice cheese. Classic application of Italian tradition for a hard well-aged cheese. I would think it would be lovely on a soft type, as well. I would try this orange reduction, served over crepes and creme fresh or blitzes. I'll report back with results, unless I die and go to heaven after samples.

I am a lover of vinegar of all different types, but I can't imagine it on ice cream.

One of my ice cream favourites:

I dump chocolate icecream into a bowel and then microwave it for a few seconds – until it just starts to get runny. Then dump vanilla into the melty chocolate. To die for! grin

I'm a little dubious about using a bowel as a microwave utensil, myself.

Certainly I think people have different palates.
Whilst I would not think I would like balsamico and gelati, you should continue to enjoy its unique flavour.
I dont like fast food or American coffee but I would be very hesitant to stop others in what they enjoy.

There are dessert balsamics that are to be added to ice cream and fruit, but they are not the traditional type. They are sweeter, thicker, and less acidic. Basically the same thing achieved by a reduction, as presented by Allen.

1 large tomato – sliced
Fresh mozzarella, provolone or similar cheese – sliced
Extra virgin olive oil
Balsamic vinegar to taste

Drizzle olive oil on tomato place slice of cheese on tomato and sprinkle balsamic vinegar to taste. Enjoy.

Found that in Spain when we ordered "salad" from room service.

Got to have fresh basil with that, too, for a proper insalada caprese (not sure what the Spanish call it). Actually, some purists would shudder at the vinegar, but I think it adds something necessary; I find the salad pretty damned dull without it.

Nancy did her first harvest of basil this morning. We're having Portobello ravioli with pesto for dinner. I got a nice chianti while picking up my amoxycillin after going to the dentist, who can't find anything "mechanically" wrong that's causing me a toothache.

I'm hoping the antibioticamoxycillin will knock down any inflammation so that I can eat in comfort. If not, the first course will be a bottle of pinot grigio…
