Summer Squash has started to come in up her. We plant both yellow and "patty pan" varieties link Did the first meal with them. Fried up some bacon, tossed in onion, then garlic, cooked until bacon was done, onion soft then tossed in 4 thinly sliced squash (need big fry pan) and let it cook down, added pepper and seasalt. Tossed some shredded cheddar on it when it was in the bowl. Shortly I will have squash coming out of my ears, then tomatoes. |

We like to grate both green and yellow (whichever we have) with the coarse side of a box grater and saute it in butter, adding shredded cheese like you, but I admit your bacon/onion/garlic sounds good too. |

We have a healthy supply of yellow crookneck at the moment. Sauteed in butter until lightly browned is my favorite, but we also eat it steamed, stir fried, and in soup. Last night I threw it in the pan with some fresh peas in the pod, oyster sauce and a little hoisin. I've grown pattypan but found it very bland. |

My garden is being shaped by a cool, dry summer. Looks like tomatoes and yellow squash (late)will come on with red peppers, onions and basil. All these good things, tossed together in garlic infused olive oil and grilled on foil over the grill. A bit healthier than the yummy bacon one, just to mix it up. |
