By sardines I mean small fresh fish.
If you fry them whole in olive oil until they are crisp, then add more oil and a bit of chile you have one of the simplest but best meals in existence.

I had a lunch in Naples; a sardine (small fresh fishy fish) grilled with olive oil and onions and placed on a piece of bread brushed with olive oil and garlic and then grilled. It was excellent.

I'll raise with a north american freshwater brook trout pan fried in butter and served with homegrown tomatoes and cucumbers.
