I am wondering if there would be some Arab cavalry that would look pretty much like crusaders after a battle such as Hattin because of the looting of equipment?
Basically wondering if I could use Fireforge knights as Arab heavy cav by using a few head and shield swaps?
Plausible?

Yes, several books I've been reading lately do reflect that looted armor was used by both sides.

During the C13th Muslim cavalry began to copy western armour to compete with the Frankish men at arms but the fashion declined when they realised that mobility (and comfort) was preferable.
