The Stardate 3000 miniatures range had a couple of "Space Subs" – one type for each faction.

Presumably they were able to cloak themselves in space to hide, unlike the other starships.

Many many years ago I saw some spaceships called "hyperspace submarines", which gave me the impression that they were somehow able to lurk in another dimension and pop out to take a shot. Or something.

Space Battleship Yamato had similar vessels used by the White Comet Empire, but they simply turned into another ship-of-the-line when the EDFS learned to detect them.
Gilpins Space had submarines suddenly disappearing into hyperspace, allowing them to not only fly through space, but at superluminal velocities. Trouble was, they could hear entities speaking to them sometimes…

In my very first SF novel (The Terran Concensus, available on Amazon) I had near-future nuclear submarines being converted into spaceships (interplanetary, not star ships) to meet the threat of an alien invasion. :)

I read a sci fi book where they converted ballistic submarines to spaceships and welded Abrams to the hulls for guns. a force field of some sort surrounded them if I remember right.

Done at least twice in real books 40+ years ago. There's an old Harry Harrison, and one of those "we're too nice to make war in the future--but the aliens aren't" pieces where they have to bring in a Cold War sub crew.
