Did the Sergeants often fight on foot?

And, did the Templar mercenary crossbowmen and spearmen wear or carry anything with the Templar colors/livery/symbols or were they just in their own attire?

Debatable. Probable some sort of jerkin or tabard with basic Templar symbology. As these were support troops and not full knights likely equipped as cheap as possible.

I don't think there is any hard evidence. Personally I'd go for uniform shields with some sort of Templar emblem (though to quote Ian Heath "it should be noted that it is not known for certain how early Templar shields were decorated", and every contemporary source seems to show a different style – compare link and link from Druzhina's site), and probably little or no uniformity in clothing or other equipment.
