I suppose the Reuben is the ultimate grilled cheese sandwich, although the Swiss cheese is a minor ingredient.

But for simple grilled cheese, my favorite is a few slices of deli Tavern Ham, with Swiss. Always have an overlap of the cheese over the bread so it melts and browns in the pan.

Grilled in a skillet with butter, rather than toasted in the oven.

I've used a toaster,for the bread;put the cheese on the toast,then microwave it for about 30 or so seconds. Not bad.

I fell in love with grilled ham and cheese on the flight line grill at Langley, fry ham a bit first then put it in the grilled cheese.

Velveeta, on white, French, or sourdough bread covered with butter works for me.

Toast until golden, and the cheese melts nicely. If the latter isn't quite melted enough, pop in the microwave on a plate and nuke for 8 – 10 seconds more.

Delicious.

my late wife's special. grilled swiss and sliced fresh tomato on rye bread buttered on both sides and grilled in a cast iron skillet.
Serve with good kosher Dill spear and kettle cooked potato chips.

My dad loved ( and still might) Lebanon bologna in his grilled cheese. Lebanon bologna if you have no idea is most like a ring bologna
