It varied from army to army. However you would most likely expect to see doctors, vets, farriers and the like in a version of their regiment's uniform unless they had a specific one such as the French medics did. In the Russian army there were all sorts of non-combatants driving wagons, acting as servants and helping surgeons etc. They actually had their own special grey-coloured uniform. |

Generally persons on some military payroll, yes. Other non-combatants such as local farmers and their families not so much. |

For those on the pension scheme, for sure – and some of the hangers-on wore discarded bits of uniforms, for example cantinières |
