Me too. I've heard of soaking them in water, chicken or beef stock, and milk. Frying them in the pan can be problematical, especially if you get to much liquid in the mix. Did that last time, and they were a challenge to turn over while frying in the pan. I'm thinking next time I might just try "meatball patties" instead, since they're recommending only cooking on two sides. That way they stay on the bun/bread, and I get more browned surface are too. Win-Win! |

Meatballs should be browned in the pan w/EVOO or in the oven. Before adding them to the sauce. |

Technically speaking, these are "polpetti". As in most things culinary (pizza, lasagna etc) the Italians do it so much better. |

Where I live you don't have to go very far to get to an Italian Eatery, Pizza place, etc. In many cases some are within a few 100 yds from each other. Or even next to one another. As I learned as I grew up. Italians from different areas/regions of Italy cook a little differently. And even have different names for the same things. Which I pretty much like all of it ! |

Dear Thresher01…The trick is to put some breadcrumbs or flour into the mixture… The Polpetina is a mini meat ball…. originally were of vegetables such as chard or spinach…
