This is a fascinating period. The Portuguese and Dutch didn't fight in Europe but took the struggle on the road, to South America (Brazil), Africa and Asia.
The author C.R. Boxer is the expert on this era. Sadly, most of his works are out of print and fetch premium prices. These are worth getting through your libraries Inter-library Loan:
Fidalgos in the Far East, 1550–1770. Fact and Fancy in the History of Macao (1948)
Salvador de Sá and the Struggle for Brazil and Angola, 1602–1686 (1952)
South China in the Sixteenth century (1953)
The Dutch in Brazil (1957)
The Dutch Seaborne Empire (1965)
The Portuguese Seaborne Empire (1969)

"Bringers of War" by Laband is still available at retail, and has some very interesting facets of the Portugese involvment in Asia and Africa. Worth it.

"Bringers of War" focusses on Africa, so if you are interested in Brazil or the Spice Islands then you will need to look elsewhere.

Still it is a good read.
