I want to try my hand at sculpting a large figure – at least 54mm, if not more.
I haven't looked at this scale for years.
what is out there?
Does anyone make equipment bits?
Is there anything around say 75mm?

Sorry, can't help with anything larger than 54mm.

There were some figs made at 1/18th scale, that have multiple joints. You can probably find them on eBay.

Also, 1/6th scale figs for collectors, but the nice ones tend to be very expensive.

I suppose, strictly speaking, 54mm matches with 1/32nd scale but many interpret it as 1/35th (which, once again strictly speaking, is 50mm). There are literally tons of 1/35 scale figures out there and a good number of 1/32nd.

There is a wide range of pre-painted larger-than-standard gaming scale "miniatures" aimed at the collectors' market. A cursory Google search turned up these and it's just a small sample. Not much in 75mm though, the only one I found is the Market Garden radioman below from Scale 75:
