There are many – hundreds perhaps?

Do any focus on military ground action? Sort of like "Rogue Squadron" for Soldiers. Not necessarily elite missions, just your typical army stuff. Rebel Soldiers, Storm Troopers, etc.

try Star Wars Battlefront: Twilight company. It is a decent read.

I don't know if it matters to you, but most of the old EU novels have been rendered "non-canon" & a new continuity has started. It is not nearly as extensive.

I'd second Twilight Company. A nice gritty combat novel set in the Star Wars universe. Gives a similar feel to Rogue One which is a good thing for me.

Would make a better movie than the recent New Order movies.

On a similar topic, I've been told the graphic novels for the heroes of the old republic were pretty good, but I don't know what they are or whether they are available as a consolidate set. Any leads?

Any of the Clone Wars books by Karen Traviss. They are excellent and humanize the clone troopers. You also get a lot if background history you wouldn't get elsewhere.

There were at least 275 in the old EU.

About 20% of that I'd consider reading. I don't tend to read books focussed on children as protagonists (and didn't even when I was one – and "young adult" fiction wasn't a thing when I was one, either.)
