I have way too many orks to play in a normal army list. I could field probably 3 or 4 army lists for that matter. But I want to get as many of them to the table as possible. So I was wondering if any of you had any cool ideas for scenarios pitting mobs against each other. I could probably introduce other players to 40k as well.

Come on, I know there are others out there with too much green.

Massacre at Da Big Toof River, which was White Dwarf 218s special scenario to pit heavily outnumbered Praetorian guards against a veritable hoard of greenskins.

Try reading Legacy of Dorn.

It is about a small group of Crimson Fists cutting their way through endless tides of Orks.

If you paint up a squad of Primaris marines and use the movie marine rules from WD 300 you should be able to do some great scenarios out of that book.

Think of the movie "The Warriors". Street gangs gather under a banner of truce to hear the words of Cyrus, who wants to unite the gangs and take over the city.

Gather the groups of green skins to see if they can select a new warlord. The stage where the warlords are gathered suddenly explodes and chaos ensues. Fun for all!

Or a Mad Max Fury Road situation where a group of Orks must run a gauntlet of other Orks to return to their breeding grounds.

Your Rogue Trader party has acquired something of value, but they have to move it across Orkville to their spacecraft. Hilarity ensues.

If you dig into the lore for 40K Orks you'll find they spend way more time fighting each other than fighting other races. They live for war, their society and economy is organised and designed for constant war … ergo, an Ork inter tribal, inter clan fight or 2 warlords (or more) fighting for domination is the justification to get all of your boyz on a field of battle :)

I would say orks sieging an Imperial Outpost.
