So to a very high degree artwork depicts both English and Welsh archers wearing the Cross of St. George during the 100 Years War.

The exact opposite is true when artwork depicts archers of the War of the Roses.

I'm wondering if there are any known instances during the latter of archers, or any infantry for that matter, wearing the red Cross on their clothing?

And again, I'm only referring to English and Welsh soldiers, not Scots or Continental mercenaries.

I think the Cross of St George was only used in National armies fighting on the continent. In civil wars only on the banners near the staff.

Depictions of Edward IV's "Invasion" of France in 1475 show the Cross of St George "livery". So yes; for national armies.
