Does anyone do the chapel in 40mm? Im thinking about a scenario using sharpes practice for that part of the defence.

I am pretty sure none exists in 40MM. At least none that I could locate via extensive searching. I scratch built my own. It is not 100% to scale, but looks the part and gets the job done.

Sash and sabre do some building and walls in 40mm but no chapel.
