Which figures would you use to represent Rome's defenders for this one, using the DBA 3.0 lists?

Essex for the isles and khurasian for the US

Yes I would use the Essex figures for their Carolingian and Ottonian figures for defenders. Khurasanbwoukd be fine for Arabs, but again the Essex figures would be fine.

Mozarabic illustrations are lijely the nearest to a pic of the time. Druzhina's site has plenty of these.
