I'll put in a plug for Nigel Tranter's history of Scotland series. The range includes medieval such as the "Bruce" trilogy, a great version of William Wallace, and an historical treatment of Macbeth.

David Gilman's Master of War series, set in the early part of the Hundred Years war. Sharon Penman's books are also a god read.

King Hereafter by Dorothy Dunnett.
This tells the 11th century story of Earl Thorfinn of Orkney, whom Dunnett believed was King Macbeth. Long but DD gives a reminder when characters reappear. A fantastic read.

Katherine by Anya Seton.
Recommended to me by my aunt who pandered to my wargaming interests every now and again. The next bit was copied but portrays it better than my scribblings.
This classic novel tells the true story of the love affair that changed history—that of Katherine Swynford and John of Gaunt, Duke of Lancaster, the ancestors of most of the British royal family. Set in the vibrant 14th century of Chaucer and the Black Death, the story features knights fighting in battle, serfs struggling in poverty, and the magnificent Plantagenets—Edward III, the Black Prince, and Richard II—who ruled despotically over a court rotten with intrigue.

It's hard to get hold of--I don't own a copy--but "Red Adam's Lady" has a very nice siege.
I'll second the Graham Shelby recommendation, and mention specifically "The Oath and the Sword."
I see Conan Doyle's "The White Company" but there's also "Sir Nigel."
And Andrew Offut wrote (as John Cleve) the "Crusader" series--mostly sold as pornography, but between the sex scenes some very nice Third Crusade warfare.

If you want RPG possibilities there are some others. Judith Merkle Riley might be worth a look, for instance.

Robyn Young has written at least two medieval trilogies (one set in the crusades, the other about Robert de Bruis)

stecal – actually William Gold is a genuine historical mercenary, though obviously fictionalised for Cameron's purposes. See Caferro's biography of Hawkwood – link – for instance.

I'd highly recommend anything by Cameron – Irish Marine, if you get tired of the middle ages, read Cameron's Tyrant series (Macedonian) and Long War series (Persian War).

Toby Clement's series set in in the Wars of the Roses is a good read. Depending on where you draw the "Medieval" line, Justin Hill has written Shieldwall, set at beginning of 11th century.
