So what model or models did you really want to paint but was so intimidating that it took you forever to get to.
For me Landsknecht were on top of that list for years.

Not intimidating, but they just take forever to paint.
Landsknechts of course, but also Highlanders.
I'm still plugging away with the Jocks, 10 at a time, but lost interest in the Landsknechts.

I find assembly of some things intimidating.
Quality Castings British Bren Carriers have up to 11 parts. Ridiculous. Old Glory and Battlefront…. one.

True North artillery are agonizing to assemble, with so many tiny metal parts. During assembly, parts bend too easily. Sometimes I think gravity is my worst enemy. Never finished them. I guess that's intimidating, but I prefer "frustrating".
Along the same line was the Khemri Blood Bowl team. Each mummy had 11 parts (familiar?) made of metal. Superglue is very annoying to work with with tiny metal parts.

Landsknechts. It's not just that they're "busy", but it you don't mix & match the colors right, they just look wrong.

Samurai, landsknechts, anything with tartans or plaids.

My very first big batch of lead minis took years to complete:

Ral Partha's first generation Orcs and Wolfriders.

Got them on clearance sale when they had to retire the molds, and oy, they took a lot of work to clean up. Very daunting.

I think Highlanders, but then I have a bunch of unpainted samurai, so maybe it was the samurai.

Least intimidating is anyone in science fiction armor. And ninjas. These can be as simple as spray prime, spray or brush base coat, wash, dry-brush, paint the base, done.

I have some Orcs that are dressed as landsknechts that I've owned for about 10 years. They are still are unpainted.

Samurai, I wouldn't want to paint those, or landsknechts, or Aztecs. I dread most animals.

In my plastic model kit days, I could never master a sailing ship, with all those lines and sails.

Bought some Aztecs in 1990, never painted them. Tried to build/paint Privateer's "Karchev The Terrible" a couple times, but always got discouraged. That's been about 12+ years.

Some of my big Tyranids, Hive Tyrant, Warrior, I think a Guard, etc. Too many details to do them up right. Oh, and my painting skills have been compared to using an old can of spray paint, not favorably.

If by model you mean model kit then I've got to say the Airfix Churchill tank – all those road wheels.

If it's a figure, then I'd say any of the multipart metal models from the 70's and 80's before glue technology caught up.

If it's about painting, then I'd say the 54mm Napoleonic figures by Airfix or Historex. Those took a lot of work to paint and yeah, I never could get the skin colours or eyes correct.

Ancient Britons/ Gauls . Painting a load of figures who all have to be different and individual, nearly drove me mad. Oh and a 1/100 B52, I still haven't got up the courage for that one yet.

A Revell 1/72 Sherman kit, which had tracks in multiple sections..

It never happened.

More successful, but very tedious.. Dalek Bumps. The 6th Doctor's coat. Waffen SS peadot uniforms.

Oh, yes, Winged Hussars, forgot about them! I've had a unit lying around since the 1980s I wanted for Fantasy games, but have yet to work up the nerve.

Tie-dye.

I count myself lucky in that years of painting Scots have given me a talent for tartans (and those infernal diced hose, which are harder than kilts but not as hard as trews!)

Female faces, they just end up looking like blokes in drag…

Figures where the detail is hard to get to with a brush, but somehow very noticeable if you miss it out.

I try to remember that my units will mostly be seen from 3 feet away or so. Since then Tartan is less fearsome, units are rarely one to one ratio so if you look and can say those are highlanders in a tartan kilt – great. If you pull out a magnifier well…..
