Can anyone recommend a good rule set which covers 16thC Burmese, Siamese etc lists…..not any that relate to Samurai warfare?

Well, Field of Glory: Renaissance has lists for Burmese/Khmer/Thai, Vietnamese, Indonesian (as did/does DBR).
Many people like the rules, although said armies would surely count as exotic.

DBR HAS VERY COMPLETE LISTS AND A VERY GOOD RULES SYSTEM.
