I am going to use Baroque for ECW would it work better than Impetus for the Italian Wars?

Despite its nominal start date of 1550 Baroque should be usable for the later campaigns of the Italian Wars, given that it has rules for the early tercio first used in the 1530s and reiters, which appeared on the scene in the 1540s. So I think the answer to your question depends on which campaign of the GIW you're trying to represent.

I think the basing differences would make Impetus a better match. Though if your (28mm?) figures are in a four fig to a base pattern then you probably could do both. My thought was Baroque was more linear than deep?

The early tercio was a huge square formation, and along with shallower later tercios and mixed pike and musket formations, Baroque also allows for deep, all-pike units.
