I'm interested in reading about how combat took place in the Dark Ages. Or, at least, an overview of what we know, what we conjecture and what we outright guess?

Something for a generalist?

This one is out of my price range:

Not exactly what you might look for, but, fictional, I recommend "The Winter King" and the sequels by Bernard Cornwell.

'Battles of the Dark Ages', by Peter Marren, published by Pen and Sword, includes material on '… how they were fought …' – and it only costs about ten pounds.

I'll second anything by B. Cornwell, all novels but very well researched combat portrayal.

The WRG book 'Armies of the Dark Ages', by Ian Heath, is available second-hand for under $20. USD

Cornwell's books depict the general use of shieldwall tactics at a time long before the dating of their introduction suggested by the archaeological evidence: circa 600AD.

Some very good choices already mentioned. I would add to the mix Stephen Pollington's "The Warrior's Way" & "The English Warrior from the Earliest Times Till 1066"

A must read IMHO is "The Battle of Maldon" plus the various Viking sagas.

As Told In The Great Hall might be a good place to start.
