Knights usually ride down infantry other than pikes in the open. Perhaps Sempach was rougher terrain? If much of the valley was bad going it would explain the Swiss victory.

I think you are right. If I do this again, then the ground needs to be rocky enough to stop it counting as good going for the knights – otherwise Leopold's real actions are hard to account for. In the real engagement he dismounted his second group of knights too during the battle (i.e. the troops that remained mounted in the refight). On the other hand, he had apparently hoped to use them to pursue, which was why they remained mounted in the first place.

The Swiss did think that their victory was 'miraculous'…
