I couldn't find a good way of explaining it.

The second Dark Souls video game had these knights in high medieval European armor, but armed with Japanese swords.

The effect was really cool and well, they're fantasy people in a made-up world, why should they look like one thing in particular.

Anything out there miniatures-wise that sort of matches the bill?

I think I follow you. Western but anime influenced. What about the Helldorado figs? Mindstalkers? While not armed with Asian weapons they have that Western characters viewed by Asian artist feel…IMHO.

There's also a Dark Souls game out there.. Kickstarter iirc. Borrow some figs from Kingdom Death. That and 16th century German platemail figs with conversions like mentioned above.

Write that into Dungeon Scum and I'd play it :)

I would probably use 1/72 figs. That way a 28mm figure would be a good bet for a boss. 54mm would work for the massive ones.

If you can find them, there are many figures in the (now defunct) Anima Tactics range by Cypher Studios that could suit your needs. They are very nice figures and you should be able to pick them up at a good price.
