Foxes of the Desert by Carrell
Panzer Battles by von Mellenthin (the early half of the book covers his experience with the Africa Corps)
Iron Hulls, Iron Hearts (for the Italian point of view)
Battles of the Eighth Army by Adrian Stewart (there are 2 volumes to this one for the early battles up till Tobruk, and the second book follows on through to Tripoli or so.

Rommel's Desert War: The Life and Death of the Afrika Korps by Samuel Mitcham…the first book I read that really explained the strategic and SUPPLY situation for me.

I second DaveJackson's nomination of Carver's trilogy ("Tobruk", "Alamein", "Dilemmas of the Desert War"). Carver does a great job of describing the command, control, organizational and doctrinal problems that manifested themselves during the desert campaign.
