As stated in the title, I am looking for an organization for Poland army squads up to platoon. How many men in each squad, what did they carry, that sort of thing.

I'd use the Russian organization.

That means, depending upon the vehicle, and time period, roughly 7 – 8 dismounts, one MG, one RPG, and the rest with AKs for each squad.
