The Northern Crusades by Eric Christiansen or maybe The Teutonic Knights by William Urban.

I didn't think much of Urban's book--and it didn't seem particularly focused on the military aspect. If you find something you like, let us know.

In the interim, Nicolle's "Lake Peipus 1242" has a lot of good info and maps.
