So, what kind of spray should I be using to protect my mini's?

Is is a dull-coat? I want a flat finish not the shinny finish.

As you can see, I'm a little new to painting mini's

I usually spray finished figures with a gloss coat, let it dry for 24 hours then over spray with a matte coat.

Brush on Pledge/Future acrylic, then spray with Dullcote…

Testors Dullcote.

If you use a good primer, the need for protective varnish diminishes

I also use Testors Dullcote.

What Skeets and Buck215 said. I typically do a Future type wash followed by a gloss coat and a final matte coat, all with a 24 hour drying period between coats. I've dropped figures/vehicles from table height to the floor and not had the paint chip.

Same same on the Pledge/Future then Dullcote.

Agreed.

I mostly just use a matt finish – Testors or equivalent
