So I've found that before 1708 they used reverse colors.
That means my officer in Sjaellandske had full purple uniform?

Also did the officers use the buff coat or simply the standard coat? I've seen both

Where did you find this? Source?

Another difference from the infantry was that cavalry officers until 1708 (when it was forbidden) had reversed colours on their coats compared to the privates. If for example the privates had red coats with blue facings then the officers had blue coats with red facings.

This is totally incorrect! There is no evidence and Tacitus provides no source for that statement! Snorrason says "Also,
one does not see, as was common during the Skånske Krig, that
officers and, at times, also noncommissioned officers were dressed in reverse colors.

The source to that statement is Karsten Skjold Petersen's book "Den Danske hærs uniforms i 1700-tallet" from 2005 (pages 6 to 7).

"Officererne bar ved århundradets begyndelse modsatte uniformsfarver af manskapet, d.v.s. at hvis folkene f.eks. havde rød kjole med blå krave og ærmeopslag, så havde officererne blå kjole med rød krave og opslag. I 1708 fik officererne giveligt ordre om fremover at bære samme farver som folkene."

Can you tell me if officers also used the buff jacket or only the uniform coat?

Skjold Peterson does not mention that explicitly but I have to assume he includes the officers when he writes that the Danish cavalry wore buff coats instead of cloth coats in battle.
