I have done quite a bit of searching for German Knights in 25-28mm that are similar to the one pictured, but I have had no luck in finding anything! If anyone could possibly point me in the right direction I would be extremely grateful.

You can make matching mounted and dismounted versions with the mounted men at arms. Depending on the helmets and arms you choose, you can vary the armor style

The former Grenadier fantasy humans sculpted by Mark Copplestone include several that are suitable.

This can probably be done with the Perry plastic sets – and of course "steel fist" offers (just none) perfect metals on this.
