How do you tackle these kind of models? In particular, the effect on the roofing?

Painting thatch?

Dark grey then drybrush with paler grey and a couple of browns..

I suggest the other way. Start with a white primer, ink or airbrush a medium and then tan brown to add texture, then drybrush white again.

That's if you want the effect in those pictures, which is very fresh thatch. In reality thatch quickly turns a dull grey before long.
