Finally getting around to painting up these guys as an opponent for my Normans. Any thoughts on how to field them? The cavalry is pretty straight forward, but I am vacillating between Mixed Weapons foot yeomen or seperate units of foot yeomen and archers.

Any suggestions?

I quite like the idea of mixed weapons, because I don't feel that massed archery would feel quite right. YMMV

I would agree. IIRC I believe the Iberian Muslims used mixed units of spear and bow armed levy so probably appropriate for the Sicilian Muslims as well.

Sounds good, here is what I am initially going to paint up, with extras to follow to give me flexibility:

1 x Mounted Sergeants (with leader)
2 x Mounted Yeomen
2 x Foot Yeomen with mixed weapons
1 x Bidowers

Later I will add another foot yeomen with moxed weapons, another bidower, and do mounted sergeants with bows so I can mix and match and have some flexibility.

After this, I feel Byzantines coming on…

Sounds good. If you have lots of Normans you could start by painting the Sicilian Arab infantry and have two warbands with units of mounted Italo-Normans leading their Sicilian Arab levies.
