I've recently aquired a few dozen Foundry late Republican/ Caesarian Roman infantry with a mix of plumed/ plumeless helmets.

Is there any significance to having a plume or not?

Also, the centurions have a mix of double plumes, some in a 'pony tail' arrangement hanging down the back of the helmet, others in 'bunches' to either side.

Again, does this have any significance?

Thanks!

Legionaries dressed for battle and would often put a plume on when time permitted. There isn't any significance to the number of plumes that I am aware of, except that centurions sometimes had the double plume.

At least one legion seems to have been given a nickname – the larks – based on their plume.
