Is there any particular hat/equipment configuration to suit a French infantry NCO in the Perry Miniatures plastic box set? Or are all the distinctions ones of colour and lace?

Arm chevrons only I believe.

Elite company Sgts had threads of gold on their epaulets. Exclusively a painter's task than a sculptor's, that one.

Also, sergeants tended to march with their musket held in the right hand at the trigger guard. This was unique to them (in most armies) and marked them out from the 'rank and file'. They also carried the sabre briquette in the same way as the companies d'elite even if they were fusiliers. This Perrys picture illustrates it well.

So to be absolutely accurate unless you use a figure skirmishing, there are no suitable sergeants in the plastics box. I would recommend the metal figures illustrated.

Fusilier sergeants had two cross-belts, rather than the single one of the privates (and corporals?).
