I expect any flintlock-era skirmish or big skirmish rules will work, though you may need to make some adjustments for Florida troop types and terrain. Lots of swamp, snakes, gators and skeeters.

"This Very Ground", "Song of Drums and Tomahawks" are two more that come to mind.

If you know the make up of the forces involved you might give "Sharp Practice 2" a try.

Sharp Practice works fantastically. I even had a supplement back in the Toofatlardies 2009 Christmas Special for the 2nd Seminole War. Now that SP2 is out I plan on getting some games in with the new version.
What I like about the TFL games is the friction element and the way morale is handled. This can be tricky with Native American warriors. I've several 2SW games using other rules that have Seminoles charging in to melee and dying to the last man. Not really something that occurred too often in Florida.

Or in any Indian War Mark. I am currently working on adapting the "Yellow Ribbon" rules for the war. I have had two playtests with one of my gaming buddies and am preparing the third revision and will try another game with two more players soon.

If you don't mind multi-figure elements you could try Chris Peers' dedicated Indian Wars rules 'Too Few to Fight, Too Many to Die'. It includes lists that cover the Seminole and their opponents.

The sword and the flame. Once you learn the system, you can fight scenarios in many eras. It is a proven winner.
