These new products – TMP link – are apparently intended mostly for the fantasy RPG and gaming market, but would you use them for historical pre-gunpowder gaming?

Beautiful, but likely not very functional for figure placement. Great for display, but for RPG's and skirmish dungeon crawls I'd go DMScotty 2.5D style.

Well, they are gridded for figure placement…

I wouldn't for two reasons

1). They are way too expensive to build a full structure with

2). They are way too expensive for use as a backdrop.
