I am reading A Tidy Little War, about Arabi uprising in Egypt, 1882. A section details the British regiments, including mention of their oddities, such as mascots (one had a goat, another a bear) which regiments were rivals, allied, etc. Odd officers – boy were there a bunch of those – and how they were forcibly crunched together during the reforms of the 1880s. Anyone suggest a book that might go into more detail about this interesting bit of history and around this time period, or earlier?

It's doesn't have all the oddities ( that would probably take an multi-volume encyclopedia) but check out Byron Farwell's "Mr. Kipling's Army: All the Queen's Men"

A History of the Regiments and Uniforms of the British Army
By Major Robert Money Barnes. It's OOP, but I saw a few copies at abebooks. Good general history of the British Army from the 1600's through the 1960's (when the book was published). Interesting "Colonel Blimp" viewpoint, railing against the amalgamation of regiments, communism and the tobacco tax!
