1, C, AND 13. I'll also add, are you uncivilized? If you put beans in your chili, then the answer is yes. DEFINITION – Chili is a stew-like soup made entirely with meat, chiles, or chili powder (or both). I got the above definition off the inter-webs, so it must be true. |

I'd love to leave the beans out, but here in Germany it's impossible to find vast quantities of actual chilis for a reasonable price, so I have to use them :( |

I've grown up with beans in chili. Ground beef, onions, peppers, tin of tomatoes, couple of tins of beans (black, kidney and-or garbanzo depending on what's in the cupboard), add spices. Which in the 70s were pretty mild! Otherwise it's beef stew. |

I make (just like Mama used to make) what I call "Yankee chili": Ground beef Bacon Onion Red Kidney Beans (canned) Diced Tomatoes (canned) Throw in a little Old El Paso "Chili Mix" This stuff is so lightly seasoned Smokey probably couldn't even taste it. |

I prefer it with beans, and agree served over rice is delicious. Or with cornbread. But this is an old argument that won't get solved here--best just to eat what you all like and be done with it. People get in the same sort of arguments over what constitutes a proper gumbo, and it can silly fast--and occasionally ugly. |

Come, come, now! We all know that Yankee chili has beans, and Texas chili does not. The real issue is the beef: authentic chili has **shredded** beef, everything thing else uses ground beef. Oh, and really authentic chili uses only chilis, not tomatoes. That is all. Perry |

I guess there is no such thing a vegetarian chili then, huh. That's a shame since the women in my family really like it and don't eat meat. What do you call beans with chilies? Spiced beans? Seems like since Chilies provide the main flavoring; whether it is meat and chilies, or beans and chilies, it would still be called chili. |

Cherno, you can make Chili without fresh or dried chilis, by using chili powder. Just use 1 – 3 Tablespoons of ground chili spice per pound of beef, depending upon how hot you like it, and which type(s) of chili powders you are using. Chili, served over rice, or spaghetti????? Beans, no beans, meat, no meat, if you are fixing it and serving it do it your way and I will eat it. My French Canaian wife makes a Cili con Carne with Penzey's Chili Con Carne spice that convinced me that you don't need a fiery kick (though I grew up with it that way in SoCal) to be delicious. Once to make a point I made chili without meat or beans for a workplace competition, it was different enough that they made on the spot an award for most innovative chili. I did not tell them that it "Old School" because it would have seemed inappropriate. I had fun making it, people ate it, I never expected to beat out all the diverse regional variations presented so I was happy to be recognized for not being lockstep. |

It is possible to add something other than Chili's to beef and get "Chili". I always add Comino and Cayenne! Keeps the Yankees away! |

Chili is made with: -- Chili pods (the mix of pods is where the flavor and heat comes from, so this is personal preference) soaked and skinned. Aim for somewhere on the Scoville Scale than won't bring your intended diners to tears. (have plenty of milk handy just in case…) Here's a really good Scoville guide: link -- Meat (cubed, NOT ground) Low quality meat is fine--it will be slow cooked for a long time. Make the chunks big enough that they don't disintegrate. -- Salt -- Water (use the water from soaking pods) -- Garlic -- Herbs of preference (Cilantro, Oregano, etc.) -- Onions Notice that there are NO beans nor ground beef. Making chili with ground beef is just plain disgusting. -- Corn meal (for thickening) |

It just doesn't matter. If it tastes good, beans or no, I want to eat it. If it is bland and tasteless, beans or no, I won't bother. If it allows me to attack the family with hideous toxic fumes a few hours later, that's a bonus. Job done. Extra lean steak mince, kidney beans, and chopped onion. Sauce knocked together using some fresh plum tomatoes as a base, salt, cayenne pepper, little bit of brown sugar (cuts the acidity when using fresh tomatoes) and fresh chillies. Simmering away now. |
