I'm finishing up my gun shop and would like to add a wall rack of rifles/shotguns and a display counter with some handguns, but I can't find just the weapons, and I don't want to end up with figures that have no weapon at all. (Actualy, I don't want anymore new figures at all, as I have over 200 painted already.) Does anyone happen to know of a source for just weapons appropriate to the Old West of (Hollywood), USA, in 28mm? TIA.

Monday Knight Productions includes a weapons sprue in item 35307 "Open Handed Indian With Weapons". You could write and see whether they'll sell you just a few sprues, or you could buy a few of the figures and have plenty of extras. MKPs I have bought have been 'robust' 25mm figs, the weapons should work for 28mm.

Conquest Miniatures once had a nice sprue of Wild West firearms that was part of their Comanches set. Neither Comanches nor accessories are listed on the current Conquest website, but you could email Eric and see whether he has any to sell:

Reaper's 20th Century Weapons set has a Winchester: link You can buy these by the sprue, which is a bit better than paying $6.99 USD for each Winchester.

Where I can find a cavalry sabre ?

Worth seeing if anyone has the Perry Cavalry sprues (their civil war cavalry are a fantastic source of plastic bits, sixguns, carbines, horses, etc.). I can't remember if they have a scabbard with a sabre or not – I know they have some arms with sabres.
