So I've come to have a mild obsession with Carentan. It has everything I want: Elites, regulars, armor, counter-attacks, bloody suicidal charges, etc… I'm looking to delve farther into it than Wikipedia will get me and need to pick up some books. Can anyone recommend some not-biography books? I'm looking for more dry historical stuff than first hand narrated stuff. Maps would be a bonus.

I will HIGHLY recommend "Lions of Carentan".

While not specifically Carentan, the 'Battlezone Normandy: Utah Beach' guidebook by Stephen Badsey is excellent for all the battles in that area.

Oh and there's George Bernage's 'Objectif Carentan', which is very good. However, it's in French and I don't know if an English edition has been published or is in the pipeline (Heimdal only do English editions of some titles – others have 50/50 French/English, or an English summary at the back and/or bi-lingual photo captions or no English at all).
