I am trying to get some 1/72nd scale aircraft of Vietnam War vintage and its hard to find physical shops to have a look at. Apart from Hobbyco what shops are in sydney?

Bergs in Parramatta, just north of the railway station. A lot of general model shops have closed down due to Internet competition and rising rents.

There is a hobby shop in St Marys that has a lot of kits, after a long drought of not stocking much

I use hobby HQ Melbourne, BNA hobby world Melbourne or frontline hobbies in Newcastle.
