I know a lot of people in Louisiana spoke french as their first language and did not understand English. would they mix french and English speakers in the same regiment or split them up?

Confederate regiments were formed by geographic location consisting of men from the same towns, counties or parishes. They would already understand each other through pre-war interaction.

They definitely would not split them up.

Some Confederate regiments were raised from the same geographic region. Others may have been cobbled together from units raised in different parts of the state. On occasion you might even find a unit raised outside the sate.

My reading indicates that the Cajuns were less than enthusiastic about fighting in the ACW. Desertion rates amongst them were very high.
